Healthy Flourless Sweet Potato Brownies

Rich, dark and super chocolaty, these sweet potato brownies are perfect for those following a paleo, vegan, gluten-free or dairy-free lifestyle.

Healthy Flourless Sweet Potato Brownies

Ingredients

  • 1 cup mashed sweet potato
  • 1/2 cup smooth nut butter almond or cashew butter
  • 3 tablespoons maple syrup
  • 1/4 cup cocoa powder
  • 1/4 cup cacao nibs optional

Instructions

  1. Preheat oven to 350 degrees.
  2. On the stove, melt nut butter with maple syrup.
  3. In a large bowl, add mashed sweet potatoes, melted nut butter, maple syrup and cocoa powder and mix well.
  4. If using cacao nibs, add to mixture.
  5. Pour mixture into greased pan or mold and bake for 20 minutes or until cooked through.
  6. Remove from oven and allow to cool before removing from the mold or pan.
